What Mise does
Independent kitchens keep safety records on clipboards that get lost, smudged or filled in at the end of the week. Mise turns the daily checks into a two-minute routine on a kitchen tablet and produces a clean record when an inspector walks in.
Key decisions
Built for the kitchen, not the office.
One check per screen, huge targets and no typing, because the person logging is holding a tray or wearing gloves.
No temperature probes yet.
Bluetooth probes add hardware and setup. Two-tap manual readings prove staff will log before anyone buys equipment.
Reports come from the checks.
Nobody fills anything in twice: the owner’s inspection-ready reports are built from the checks staff already do.
Big chains have compliance software. The independent bistro has a clipboard.
Restaurants must record fridge temperatures, cooking and cooling checks, cleaning and allergen information. Enterprise tools are priced and built for chains. Independent owners end up with paper logs that are incomplete exactly when an inspector asks for them.
- Paper logs get lost, damaged or back-filled
- Staff rotate, so nobody owns the daily checks
- Allergen information lives in the chef's head
- Inspection day means hours of searching for records
The chef-owner
Owner of a 1–3 site independent restaurant
Works in the kitchen, manages a small rotating team, does admin late at night.
What they need to get done
- Make sure the daily checks actually happen
- Know immediately when something is out of range
- Answer allergen questions confidently at the pass
- Hand an inspector a complete record in minutes
The assumption to prove
Kitchen staff will complete digital checks if each one takes seconds on a shared tablet with wet or gloved hands.
Design for the kitchen, not the office: huge targets, one check per screen, no typing. The owner dashboard and reports come from that data automatically.

The core journey
Clock in to checks
Staff pick their name on the kitchen tablet
Opening checks
Fridges and freezers logged with a number pad
Flag an issue
Out-of-range reading prompts a corrective action
Service
Cooking and cooling checks, allergen lookups
Closing
Cleaning tasks signed off
Report
Owner exports an inspection-ready record
Design exploration
We tested layouts against a harsh brief: a cook with wet hands, a noisy kitchen and ten seconds of attention. Anything that needed reading was redesigned to be recognised instead.

Phone app or shared tablet?
Shared kitchen tablet
Staff shouldn't need personal phones at the pass. One wall-mounted tablet makes checks part of the routine.
Type values or tap?
Oversized number pad
Keyboards fail with gloves. A big pad with sensible defaults gets a reading in two taps.
How to handle a bad reading?
Guided corrective action
An alarm alone creates panic. Mise asks what was done — moved stock, called engineer — which is what inspectors want to see.
Mise’s design system
Warm, legible and forgiving. Burgundy for action, saffron for attention, and touch targets twice the usual size.
